just returned from a brief visit to boston (i'll miss your kitty very much, fred. especially the 6am yowling at the top of kitty's little lungs). sorry to post so infrequently lately, but i'm back. first, tim and i finally ate at radius together, and here's what brian put together for us: -tartare of pacific yellowtail: lentil de puys, breadcrumbs, espelette peppers, sauce grenobloise. 2002 stephan ehlen riesling kabinett -loup de mer: shellfish ragout, baby fennel, fines herbes, and champagne sabayon. they switched up the 2001 julien meyer klevner pinot blanc with some lovely chablis. -butter-poached lobster: green onions, black trumpet mushrooms, lobster and white wine bordelaise. 2000 chateau villa bel-air graves. a truly remarkable sauvignon blanc with tamarind notes all over it. -seared hudson valley foie gras: cranberry fondue and cranberry vinaigrette. the very mind-blowing 2000 vintage of inniskillin riesling ice wine. that shit is hard to come by, and i'll be lucky to ever taste it again. the cranberry was a bit much, but the foie gras helped me get over that. -saddle of rabbit: wrapped with applewood bacon and stuffed with confit of leg, brussels sprout leaves, carrot puree, mustard sauce. 2000 renatto ratti barbera d'alba "torriglione". -pied de cochon: cranberry beans, bacon lardons, sweet garlic-parsley sauce. 1999 darviot-perrin chassagne-montrachet "bondues". crispy pigs feet? fuck, yeah. -slow-roasted prime ribeye: robuchon potatoes, baby carrots, haricots verts and red wine. 1995 e. guigal hermitage. a radius classic, and one i never tire of. -the classic beet salad w/ goat cheese and frisee that i've plated a million times. 2002 salvard cheverny -roasted pineapple with coconut ice cream, pineapple cake and pineapple soup. 2000 sarocco moscato d'asti; quartet of apples: sorbet, financier, roasted with goat cheese, and some other thing. 2000 chateau soucherie coteaux de layon . i've swapped out the unicorns for my latest purchases: sondre lerche (son-druh lair-kay, the sticker says) and the new outkast. i am very much enjoying DFW's the broom of the system. and i do believe someday i will use the name "project total yang" for something.
